Basics To Know

- as my father taught me

Most cooking, most sauces, soups, and almost everything begins with heating up some healthy fat or oil on medium heat, and as my father taught me, meanwhile you peel and chop some onions, to then add them as the very first thing to the hot oil, and let them turn soft and slightly yellow, while string so that they don't burn.
And then, if you like, also add some chopped garlic for even more flavour, which as well turns a bit yellow but burns a lot easier.

And you hardly ever need to measure anything when cooking standard things. Once you get to know the basics by cooking more or less regularly, it gradually all becomes very common sense, as it turns out to be so simple.
Salt, spices and herbs are things that you get to know quite quick, and find your own favourites in no time. Like everyone, you will have your own taste and sense of things. One good example is that most people seem to like the spice mix called "Graham Marsala", or the so called "Italian Herbs" of which just a bit makes any cooked vegetables really tasty and interesting as it gives the food an exotic note, and make you appear like a good cook.
